Dinner with my Neighbors

I had invited all the younger people here at camp over for supper. Everyone had something going on but my neighbors Mark and Nikki. Mandy had planned to come but called because she left Lubbock late but still came over just later.

It has been so much fun getting to know Mark and Nikki since they moved here in October. I tried 2 new dishes. The first was a Broccoli and Chicken Casserole. I really liked it (I will leave the recipe at the end) and the other was a dessert. After Mandy got here we were all talking and everyone agreed it was alright to let the dogs in. I usually leave them out when a group of people are at the trailer or certain visitors because not everyone is a dog lover and it is a must with Wreckless! :)

Well it took about 30 minutes but the pups finally settled down. Mark and Wreckless have become best buds (that is in Wreckless' eyes) because Mark has been taking Wreckless for walks. Wreckless sat in his lap and licked Mark, and let Mark pet him. Wreckless was loving all the attention. Usually everyone goes for sweet Daisy-Rose but he was the chosen one (although Mark wasn't given much of a choice). After an hour of being entertained by them Mark, Nikki, and Mandy headed home.

One of the things I have been praying for and asking for prayer about since moving to camp May 2007 is friendships at camp. Over time the Lord has been providing and all I can do is give thanks!

Broccoli Chicken Casserole

2 1/2 cups uncooked noodles
2 1/2 cups cooked chicken breast
1 package (10 oz.) frozen broccoli florets, thawed
1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
1/2 cup of milk
1/2 cup shredded cheddar cheese
1 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
Paprika, optional

Cook noodles according to package directions; drain and place in a large bowl. Add the chicken and broccoli. In a small bowl, combine the soup, milk, cheese, basil, salt and pepper. Pour over chicken mixture and stir until combined.
Transfer to a 2 qt. baking dish coated with non-stick cooking spray. Cover and bake at 350 degrees for 35-40 minutes or until bubbly. Sprinkle with paprika if desired.
